Super Speedy Lentil Salad


100 g tinned brown lentils, rinsed and drained

1 cup parsley, shredded

1/2 cup cucumber, diced

1/2 cup red capsicum, diced

1/2 cup celery, diced

1/4 cup cashews, roasted

1/4 avocado, diced

1/2 lemon, juice

1 tsp olive oil

 

METHOD

Mix everything together in a bowl and you are ready to eat.
